In Norwegian, “Rest” means what is left. Food waste is recognized as a major challenge in Western food industry and consumerism. It raises grave moral and environmental issues. It insults common sense. And it robbes us of potentially brilliant tastes and experiences. 

We visited this well-hiden yet elegant restaurant on Yin's birthday in 2023. I booked the seats for us five months earlier. They serve about eight tables of 2-6 guests on evenings from Wednesday to Saturday.

We started with two glasses of Champagne as apéritifs, then we enjoyed the set menu with one wine pairing consisting of 8 glasses.
